Raw Cabbage & Corn Slaw

Ingredients

  • 1/2 head of red cabbage, shredded

  • 2 ears of fresh corn cut from the cob

  • 1 cup carrots cut into matchsticks (I like to use a mix of the rainbow carrots because they are so pretty)

  • 1/2 cup cilantro chopped

  • 1 cup of almonds peeled

  • 2 limes juiced

  • 2 tablespoon olive oil

  • 1 teaspoon cumin powder

  • 1/2 teaspoon paprika powder

  • Salt and pepper to taste

DIRECTIONS

  • Heat 1 tablespoon of olive oil on medium heat in a saute’ pan.

  • Add the cumin powder and the paprika powder.

  • Saute’ until aromatic.

  • Add the corn and coat well gently cooking the corn.

  • Add the cabbage and the carrots blending all of the flavors together.

  • Lightly cook. The object is to slightly cook the carrots and cabbage so they are easier to digest.

  • In a separate bowl whisk together the lime juice and1 tablespoon of olive oil.

  • Add salt and pepper to taste.

  • Add the cabbage corn mixture to the bowl and blend well.

  • Sprinkle the chopped cilantro and almonds on top.

  • Eat Mindfully and Enjoy.
