Raw Cabbage & Corn Slaw

Ingredients
1/2 head of red cabbage, shredded
2 ears of fresh corn cut from the cob
1 cup carrots cut into matchsticks (I like to use a mix of the rainbow carrots because they are so pretty)
1/2 cup cilantro chopped
1 cup of almonds peeled
2 limes juiced
2 tablespoon olive oil
1 teaspoon cumin powder
1/2 teaspoon paprika powder
Salt and pepper to taste
DIRECTIONS
Heat 1 tablespoon of olive oil on medium heat in a saute’ pan.
Add the cumin powder and the paprika powder.
Saute’ until aromatic.
Add the corn and coat well gently cooking the corn.
Add the cabbage and the carrots blending all of the flavors together.
Lightly cook. The object is to slightly cook the carrots and cabbage so they are easier to digest.
In a separate bowl whisk together the lime juice and1 tablespoon of olive oil.
Add salt and pepper to taste.
Add the cabbage corn mixture to the bowl and blend well.
Sprinkle the chopped cilantro and almonds on top.
