Sweet & Savory Veggie Skewers

Ingredients
1 medium zucchini
1 medium crookneck squash
1 cup grape tomatoes
6 medium Cremini mushrooms
8 ounces extra firm tofu drained and pressed
1 small red bell pepper
1 small yellow bell pepper
marinade
2 tablespoons coconut oil
1 tablespoon maple syrup
1 teaspoon liquid smoke
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/3 teaspoon pepper
DIRECTIONS
Whisk all ingredients together.
Fold in vegetables and tofu to coat evenly.
Let the vegetables sit for an hour or more in the marinade to soak in the goodness.
Put seasoned veggies and tofu on skewers.
Place on grill to cook until soft and delicious.
