Sweet & Savory Veggie Skewers

Ingredients

  • 1 medium zucchini

  • 1 medium crookneck squash

  • 1 cup grape tomatoes

  • 6 medium Cremini mushrooms

  • 8 ounces extra firm tofu drained and pressed

  • 1 small red bell pepper

  • 1 small yellow bell pepper

  • marinade

  • 2 tablespoons coconut oil

  • 1 tablespoon maple syrup

  • 1 teaspoon liquid smoke

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/3 teaspoon pepper


DIRECTIONS

  • Whisk all ingredients together.

  • Fold in vegetables and tofu to coat evenly.

  • Let the vegetables sit for an hour or more in the marinade to soak in the goodness.

  • Put seasoned veggies and tofu on skewers.

  • Place on grill to cook until soft and delicious.
