Summer Orzo Pasta Salad

Ingredients

  • 8 oz. orzo (substitute gluten free pasta in desired)

  • 1 cup green beans, trimmed and diced

  • 2 ears sweet corn, kernels removed

  • 1 cup sweet cherry tomatoes, halved

  • 1 clove garlic, minced

  • 3 tbsp. olive oil

  • 5 tbsp. lemon juice

  • 1 cup torn basil leaves

  • 1/2 cup raw sprouted pumpkin seeds + a handful to garnish

  • Salt & pepper to taste

DIRECTIONS

  • Cook orzo according to the package

  • Two minutes before cooking time is done, add green beans to the pot.

  • Drain in a fine-mesh colander & rinse with cold water

  • Transfer to a large bowl & stir in remaining ingredients

  • Season with salt and pepper to taste

  • Garnish with basil leaves and extra pumpkin seeds

  • Eat and enjoy!
