Summer Orzo Pasta Salad

Ingredients
8 oz. orzo (substitute gluten free pasta in desired)
1 cup green beans, trimmed and diced
2 ears sweet corn, kernels removed
1 cup sweet cherry tomatoes, halved
1 clove garlic, minced
3 tbsp. olive oil
5 tbsp. lemon juice
1 cup torn basil leaves
1/2 cup raw sprouted pumpkin seeds + a handful to garnish
Salt & pepper to taste
DIRECTIONS
Cook orzo according to the package
Two minutes before cooking time is done, add green beans to the pot.
Drain in a fine-mesh colander & rinse with cold water
Transfer to a large bowl & stir in remaining ingredients
Season with salt and pepper to taste
Garnish with basil leaves and extra pumpkin seeds
Eat and enjoy!
