Chia Chai Amaranth Porridge

INGREDIENTS

  • 1 cup amaranth

  • ¼ cup chia seed

  • 3 cups of water

  • 1 tsp cinnamon powder

  • 1 tsp cardamom powder

  • ½ tsp ginger powder

  • ¼ tsp nutmeg powder

  • ⅛ tsp clove powder

  • Raw local honey to taste

DIRECTIONS

1. Soak the amaranth for a few hours to aid in digestion.

2. Drain and add with the chia seeds and spices to a saucepan. Stir well to blend the spices into the chia and amaranth..

3. Add 3 cups of water and bring to a boil. Lower the heat and simmer covered with a little space  for steam to escape for 25 minutes.

4. Ladle into a bowl and allow to cool just a bit before adding a teaspoon or so of honey to taste.

5. Enjoy!
